Beyond Vegan: Cooper’s Fresh Take on Food and Wellbeing

A life devoted to authentic, plant-based living

With his background in Nutrition Consultancy and Personal Training, Cooper lives and breathes his beliefs. Thirteen years ago, what began as a nine-day experiment during the Chinese Vegetarian Festival transformed into a new way of life. After just ten days eating plant-based, Cooper felt so energised that he never looked back.

Sharing his new passion and knowledge by cooking for friends and delivering homemade meal boxes, gradually evolved into a calling. In 2019, he was invited to open a restaurant at Anana Ecological Resort, and in 2024 he moved it into its own sala on the resort grounds, surrounded by the organic garden that now fuels his menu.

The garden that feeds the kitchen

The garden is beautiful and diverse, tended by a small team of gardeners skilled in organic principles:


🌱 No artificial chemicals.
🍃 Homemade papaya-leaf fertiliser and natural mulching.
🌼 Companion planting to deter pests and flowers to attract pollinators.

Its currently filled with basils, ginger, eggplant, lettuces, watercress, mulberries, kafir lime leaves, lemongrass, banana, mango, morning glory and many more. When certain produce can’t be grown naturally in Krabi’s climate — like strawberries — Cooper simply leaves them off the menu. Everything in his kitchen is made from scratch: ketchup, mayonnaise, sauces, and stocks. What can’t be grown onsite is sourced from trusted local farms that share his values.
